Egg Pasturising Machines

If you want to serve eggs and egg products with confidence, then the Pollux and Castor systems are essential. These unique systems allow the operator to serve perfectly cooked soft or hard-boiled shell eggs whilst removing any trace elements of salmonella or avian bacteria.

Up to 60 shell eggs at a time can be cooked and pasteurised in the Pollux unit using steam combined with accurate temperature control. Temperatures are accurate to within 0.04 of 1 degree.

Shell eggs can also be pasteurised in their raw state, whilst retaining their composition, raw cooking properties and their nutritional value. This will allow Chefs to safely use them in dishes such as meringues, sabayon, bavarois chocolate mousse, steak tartare and in addition, food items such as béarnaise sauce and mayonnaise.

The Pollux system is an extremely versatile piece of equipment. A built-in steamer function allows you to steam small quantities of vegetables, fish or meat.
